Te Mana Lamb Frenched Rack (Cap-On) is an exquisite cut. This is a single rack with the fat cap left on, which will baste the meat as it roasts and give you an even more flavourful dish. Aged for 21 days with well-defined micro marbling and high levels of Omega 3, it creates a flavour experience previously thought unimaginable. This is a premium cut, beloved by chefs but easy to cook.
It is the first eight ribs adjacent to the loin, a very tender cut. This cut has had the backbone removed so it can be easily sliced into small chops or cutlets (aka French lamb cutlets) before or after cooking. It is “frenched” because the bones have been scraped almost clean down to the meat. The whole cut can be further trimmed of fat if desired.
